I’ve been on a brownie kick lately. I don’t know what’s come over me. Maybe it’s the stress of selling our house (which we finally sold. Yay!) and it could also be the pre-stress of building the new one soon. I’m not quite sure. All I know is that these brownies were sent from heaven above. And that I ate four. For real. 😉

These Lunch Lady Brownies are simply incredible. Cake-like, filled with chocolate flavor, and totally amazing. Apparently, it’s an old recipe from the sweet ladies who served our lunches in Elementary school. I honestly don’t remember the brownies in Elementary school, but I do remember the rolls and the pizza. Do you remember how good those dinner rolls were? After I would eat mine I would go around the lunch table asking everyone else if I could have theirs. Haha.

Ingredients
Brownies
- 1 cup salted butter melted
- 1/2 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 4 large eggs
- 4 teaspoons vanilla extract
Chocolate Frosting
- 1/4 cup salted butter softened
- 1/4 cup 2% milk
- 1/4 cup unsweetened cocoa powder
- 3 cups powdered sugar
Instructions
Brownies
- Preheat oven to 350° F. Line a 9×13-inch baking dish with parchment paper and spray paper with non-stick spray. Set aside.
- In the bowl of an electric stand-mixer, add the melted butter and cocoa powder. Using the paddle attachment, blend until smooth.
- Add the flour and sugar. Beat together then add eggs and vanilla. Mix just until combined. Don’t over mix. (Batter will be thick)
- Pour batter into prepared baking dish and spread out evenly. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Remove brownies from oven and let stand 15 minutes before frosting. You want the brownies still warm when you frost them!
Chocolate Frosting
- Beat together all the frosting ingredients until smooth. Pour and spread over warm brownies. Let brownies cool completely before cutting and serving.

Would you bake the same amount of time if making in a 8×8 pan?
You would have to bake them longer. I would set the timer for 5 minutes longer and test them. If the toothpick comes out clean, they are done.
Hi Gena: Do the toothpick test at 30 minutes and if still not done bake another 10 minutes check again..
Do I need a different temperature for a glass baking pan and a different baking time?

Don’t ever use margine. It is not good for you!
FYI–I learned from chemistry, no joke that margarine is only ONE molecule away from being plastic. AND even flies won’t touch the stuff. I’m old enough to remember in the 70’s when margarine was seriously the “in thing”. Blahhhh! Now that I’m a grown up and in charge of my own kitchen, nothing but real butter in my fridge.

I’ve made this with real butter and again with margarine. The margarine gave a slightly strange taste to the frosting, but other than that, it was fine.

We have dairy allergies and usually substitute coconut oil in baked goods. 🙂

Yes, it is on the thicker side. You can always thin any frosting out with milk for a thinner consistency 🙂

Found your recipe yesterday and made it right away. They were very delicious. But a few people I shared them with weren’t sure if they were brownies or fudge. What would I add/omit to make them more chewy or cakey. Flavor was great though!
In order to make them more ‘cakey’, you need to add baking powder.

These are delicious. My butter probably wasn’t soft enough, but after 15 minutes it wasn’t quite warm enough to make the frosting smooth and melty like that. Or I went too heavy on the powdered sugar. Despite not being as pretty as yours, I will definitely make again. I’d like to try a dark cocoa powder too. These are lovely and milk chocolatey.
My frosting came out more like a paste and I had to use the microwave to get it runny enough to spread onto the brownies. Other then that it was great. Thanks for the recipe!

I always google measurements I an bit familiar with – 1 cup is 250 grams
It depends what you are measuring. 1 cup of butter is 250 grams but other things weigh differently. Just put whatever you want to convert into Google and a result will come up. There are sites that specialize in this. I live in Oz but am Canadian and am forever converting.
340 grams are in a cup.

Kim, I think the only thing that would make these dry is by using too much flour. Be careful on how you are measuring your flour. All you need is 2 cups for this recipe. Hope you try them again, because they really are amazing 🙂

I’m going to try these using gluten-free all purpose flour and dairy-free alternatives. I wish I didn’t but my tummy doesn’t do gluten or dairy without issues anymore. Fingers crossed b/c these look incredible!

Used gluten free flour. Turned out great. Used almond milk, at just room temp, the butter was organic from only grass fed cows from local organic registered farmer. A little grainy when mixed, turned out cake like, but common with gluten free based all purpose flour.going to try 1/4 cup home made COLD applesause to moisten batter a bit for a fudgier texture after baking.

I made these yesterday for the first time and will be making them again. I did add a little espresso powder to both the batter and the frosting, about 1 teaspoon each, just enough to enhance the chocolate. I also added a little sea salt after I frosted them for that sweet salty flavor. I will definitely be making them again.
Oh my gosh! These are absolutely luscious. I added milk chocolate chips to the batter. Spread it out on a jelly roll pan, so they were thin. I put the icing in between, and on top with a dollop of cool whip. Heaven! I also used half, and half in place of the milk in the icing, and put it in the fodder processor. The texture is so creamy! Thanks for the recipe.

I just made these but I only set my timer for 25 minutes and these are a little dry. I thought that 3 cups of powdered sugar was a little too much so I just used about 2 1/2 and that was fine. I am not sure but wasn’t real happy with these. I usually like mine moist like a cake. thanks for sharing though

Powdered sugar is confectionary sugar. Did you use granulated? That’s the only way it could come out grainy. The recipe states powdered..
I have used this frosting recipe, my recipe says to cook 3 minutes. Pour on hot brownies and spread. Let cool. Cut brownies ( or at least the frosting) before completely cooled. Frosting is like a fudge when cooled.

I added in a lil bit of my homemade chocolate ganache (semi sweet chocolate,heavy cream, and a dash of chili powder) into both the brownie batter and frosting and it gave it a lil extra sizzle. Img they were so good!!! Also I loaded it with choc. Chips. LOVE the recipe. It will be a hit at my parties! So moist and Delish!

I had to make these. It’s 945pm and I have been laid up from surgery for 4 weeks. I asked hubby and he’s like ugh no. SO I hobbled into the kitchen and made them. I found the recipe for the Peanut Butter Cake they made in school and now with this I only need the rolls.
Ive actually added Amarula to both the frosting and the mix. I call it Drunken Lunch Lady!
My family devours it everytime. I just finished making two batches of them for our staff meeting ( one without and one with Amarula)
*5-6 Cap fulls for the mix and 4 cap fulls for the icing.
I suggest tweaking it to preference >> excuse to eat the batter 😉
Why do you need to line the 9×13 pan with foil? I’m confused. I couldn’t find an answer in the recipe.
Just for easy removal. You don’t have to but I like to for easy clean-up 🙂

I love this recipe is so easy to make and is soooo good, I have to be honest I dont make the frosting I sprinkle powered sugar lightly on top to save a few calories. The brownies are so sweet and chocolaty they are great with no frosting too
These are delish. I bake them in an 8×8 because I like a thick brownie. I add milk though because the batter was way too thick for me. Definitely making again 🙂
I made these today..they are very good..mine also came out more “cake like”..my thought for people who have been asking is try cutting back by 1 egg..if you read the back of a brownie box..it will say..for more cake like brownies add an additional egg..4 eggs did seem like a lot ..just a thought..they were still yummy
O.M.G.!!!! I just baked these brownies & I can’t tell you how the actual brownies taste but for the love of CHOCOLATE, this frosting is TO DIE FOR!!!! I couldn’t stop eating it…; omg! Yes- for those of you that say it comes out like “paste”, it is in fact SUPER THICK. But I just kept working it with the back of a stainless steel spoon & it came out amazing. I’m surprised I had any frosting left because of how much I ate once I whipped it all together! Puts B.C. Chocolate Frosting to shame!
I just made these, let them cool for a few minutes and frosted them. My entire house smells like a brownie…if they taste as good as they smell (which I have no doubt), they won’t be around long! As a matter of fact, my 13 year old grandson keeps going in there and trying to steal the entire pan. I let him lick the beaters, I told him he doesn’t get any of the brownies, LOL.

I made these brownies today…do NOT ask how many calories are in them! More importantly, I am of the age where our lunch ladies DID make these brownies and now I understand why the portion sizes were what they were! These are SUPER simple to make and turned out WONDERFUL! My daughter who is not a cake or frosting fan…DO NOT EVEN KNOW WHERE SHE GETS THAT FROM…SHE LOVED THIS! It’s nice that they aren’t that processed overly sweet tasting things that you get out of a box mix or the disgusting one’s from the stores bakery section.
If you follow the recipe, exactly as it states, you will have success with these.

Just made these. I used the spoon, tap, level/scrape method for the flour and added 1/8 tsp salt. I made half a batch in an 8×8 and baked 25 minutes. They came out really great! I also added a peanut butter/powdered sugar layer of topping so overall they were a little too rich with the double icing. Lol I cut the half batch into 12 pieces but I think I’d go with 16 next time. And possibly half the icing.

I got out my recipe; cause this sounded similar and it is very close to mine. Mine has only 1 c flour and has 1/2 tsp baking powder, and 1/4 tsp salt and 2 TBSP vanilla extract. I will definitely try this!

Hi Tara! I like to use a plastic knife to cut brownies, and use a sawing motion when cutting. That helps them stay together and look nice 🙂

This is my favorite brownie recipe. Reminds me of brownies that came from my favorite bakery that is long gone. The first time i made these And ate that first brownie my eyes welled up with teaRs becaUse so many memories came Flooding back. Ive been using this recipe for over 4 years now and always make sure to keep some aside for myself. My school didn’t serve brownies (we had TX sheet cake) but Snow WHite bakery did and they tasted just like these.

Does this recipe call for salted or unsalted butter?
I always use salted butter. Just a personal preference. 🙂
Just made these and so easy, they did turn out more cake like and I used a canned frosting will make the frosting in rec next time. They are very good
I love the brownies, the froSting is the best! Mine always taste great, but look dry aNd Not Moist like yours. What can i do dIfferent? LaSt time i sifted the Flour but it didnt help! PlEase help me!

Hi Terre! The amount of flour you use is typically what can make brownies moist or not. Even though you’re sifting it you could still be using too much flour depending on how you pack your flour in the measuring cup.
For me, I first stir my flour in whatever container it’s being held in to loosen it up. Then I do the scoop and sweep method. I scoop the measuring cup into the flour and then sweep the excess off. This has always worked for me. Hope this helps and happy baking! 🙂 xo

We just made these & they are the BOMB!!!! So we are kinda new at his learning how to bake thing. I mean what else is there to do but learn how to bake and watch Tiger King. haha
After just eating 2 of these back to back here is my review. my brownie was more like a cake texture and my icing was runny. Now I was only able to post one pic and some how can’t post another one with you seeing the extra brownie. We followed the recipe to a t.

This recipe calls for all purpose flour but does not call for salt or baking powder or baking soda. Should any of thes3 ingRedients be added?
No you do not need any leavening agents in this recipe. 🙂 These are more fudge-like brownies.

These brownies are the best I have ever tasted!! I will never use another recipe. Put the frosting on when they are still a little warm and it forms a delicious glaze on top. I’m going to go home and make some of these brownies!!

Hi Jennifer, the dryness could most likely be from over-flouring. I do the scoop and sweep method when measuring flour. I never pack it.

JUST CURIOUS, WHAT IS THE REASONING BEHIND USING THE ALUMINUM FOIL INSIDE THE BAKING DISH? THE BROWNIES WERE DELICIOUS!

Can I spray The baking dish with Pam Spray or Do I NEED to line the pan with foil?
You can spray it with pam or cooking spray. I like to line mine with foil for just the easy clean up 🙂

Yes, I have tried it with 1/2 cup chopped walnuts. Delicious!

My granddaughter wanted brownies sO i decided to try this recipe. We both loved them; they did not Disappoint. I only baked mine for 20 minutes. Next time I will pr obably check them around 17 minutes. The icing recipe is similar to the one i use for texas chocolate cake so i made it the Same way – melted the butter over medium heat, added the chocolate and stirred until smooth. I then removed from heat, added the milk and stirred again until the milk was incorporated and the miXtUre was comBined and slightly shiny. I then added a teaspoon of vanilla, stirred and added the powdered sugar. I then beat the icing on high until smooth and combineD.
This Has become my Go-to brownies recipe and they are a hit With Everyone. Easy to make and so delicious.
Could you double the reCipe and make these in a sheet pan? Trying to feed a Large crowd.
I have never tried it, but I think it would work. I would just make sure to use a large sheet pan. Like a 17 inch sheet pan. I would also check them after 15 to 20 minutes for doneness because baking them in a sheet pan they will be thinner, so they may not need as long to bake. Please let me know if you try it! 🙂
Can these be frozen for later eating?
Yes! These brownies freeze well! When we want to eat them after they’ve been frozen we just pop one in the microwave for a few seconds!
I was shocked at how easy this recipe was to make and yet they came out so perfect!
These are really good! This is the second time making them. This time I only had about a cup of powdered sugar for the frosting so I cut the amount by a third. It was enough to do the pan and we liked them better with not quite so much frosting!
This is ptobably my 5th time using this recipe, it’s bevome my go-to, these are absolutely delicious, They melt in your mouth, and the frosting adds that little crunch. Depending on how thick the brownies are I’d recommend not keeping them im the oven for the full 30minutes, mine are usually done between 15-25 minutes ☺️
Can’t wait to try these. I have two gRanchildren 12 a d 14 years of age and they just love chocolate.

This is my go to BROWNIE. Love, love them. I add dried cranberries and walnuts. Sometimes just walnuts but add 1/4 c of peanut butter to icing.

Really good! My frosting came out darker than yours. Very thick batter and frosting, but spreadable. I added a pinch of salt to batter and frosting. Will definitely make this again. Already shared Recipe with 2 friends.

Either works fine! If you store on the counter just make sure they are wrapped up. They should stay good for a couple of days left that way. In the fridge they’ll last a few days longer 🙂
Make sure to add 1 teaspoon of salt to this recipe! It just isn’t the same without it. Also, double the recipe and bake in a cookie sheet (jelly roll) pan – it makes a party!
They are pretty good! Very glad I made the frosting. The brownies are very dense but still yummy with the frosting!
They work great as Brownie cupcakes too! I followed the same recipe but the only cooked them for about 20 minutes instead!
I have made these brownies at least 100 times, and they are scarfed up every single time!!, So good and moist and chocolately!!
Now, about those lunch rolls!! They were SO GOOD, SO GOOD, SO GOOD!! And in high school, the sweet ladies would make them into cinnamon rolls on Fridays! Oh my goodness! I think the rolls were 0.15 each day, and I’d get a glass of sweet tea for a quarter, so my lunch would be 40 cents! But on Fridays, I believe the cinnamon rolls were 25 cents so I’d spend a whopping 50 cents for my lunch. The cinnamon rolls and the ice tea were both extra large! (That’s been over 40 years ago, and I still remember how good they were!)

Made this recipe. Used a little less sugar, about 1/4 c less. Still delicious. Didnt use frosting recipe bc my family prefers them plain. So i sifted powder sugar over top for the look mainly. Wonderful brownie recipe .
About the rolls, oh yesssss!! I would trade everything I could on my lunch plate just to get those rolls. They were the best!!!
made them around Christmas thought it was more like chocolate cake so made them again with half the flour it calls for and turned out more brownie like. super easy love this recipe.

He had me add sprinkles on top. These have that perfect balance of chewy and cake. Love the texture and flavor is perfect. I used a 10 x 16 pan made in preheated oven done at 18 minutes.
I make these several times a year. They’re always a hit! I double the recipe and use a small rimmed cookie sheet.
These brownies are very good! I have made them several times , and they always turn out nicely. Typically I add one tablespoon of coffee granules to the brownies and one teaspoon of same to the icing. Next time I make the icing I am going to experiment using the dark chocolate cocoa. Also I add around one cup of chopped walnuts to the brownies because I like the texture and taste.

Half the recipe, divide batter evenly into 4 greased ramekins, and air fry on 320 degrees for 17 minutes! Personal brownies!! And don’t forget the frosting!
