I’ve tried different mixtures, even adding xanthan gum, chia seeds and whatever ingredientes I could find to make sure the consistency remains similar to the products done with wheat flour: This os what I like about this gluten free flour- It doesn’t alter the texture or consistency of my desserts and food. I’ve used it for brownies, pancakes and banana bread and they’ve all came put moist and fluffy (most GF breads fall apart and feel dry)- I don’t have to alter my recipes, it is truly cup for cup, so it is extremely convenient.- The taste is delicious, my kids are unable to tell the difference, so it definitely passed the test.Something that took a bit to get used to was the sticky texture while mixing, it sometimes made it difficult to scoop out of the bowl and if you don’t wash or rinse quickly, it will become hard to clean up, not a deal breaker, but something to consider.I loooooooove it and recommend it to everyone wanting to go GF without the hassle of altering their trusted recipes.

    Cup4cup is the closest gluten free substitute I’ve found to regular all purpose flour. I’ve used it in beer bread, cookies, sauces, breaded meat and it works very well in all circumstances. It’s not perfect in beer bread, but miles ahead of the few other GF flours I’ve tried.

    Admittedly there are way more brands of GF all purpose flour out there than I’ve tried. I’ve only used three, but Cup4cup is the very clear winner. Lots of people seem to have a definite favorite and there’s no consensus I can discern. I might revise this if I stumble upon a something better. I also haven’t tried any of the GF pastry flours, that may solve my problem with the bread.

    Three things I’m not thrilled with: 1) Cup4cup contains dairy. I try to be dairy free since I’m intolerant, and it was not clear until I read the ingredient list carefully that milk powder was an ingredient. A lot of people intolerant to gluten are also intolerant to casein in dairy. So I’d make that fact of containing milk a little more obvious on the packaging especially since it’s not an “expected” ingredient. (The dairy didn’t end up being very noticeable to me after using it, but it may be for others.) 2) Cup4cup is super expensive, even by the standards of other gluten free all purpose flours, which is priced far higher than wheat all purpose flour. So it’s some pricey stuff and I’ve never really understood why since the ingredient list isn’t terribly exotic. There is no real cost benefit even in the expensive domain of gluten free foods of making your own baked goods if you’re using Cup4cup, you’re clearly baking for enjoyment only. That’s ok for the hobbyist chef, but paying more in the end than the prepared foods is a little bizarre. 3) Cup4cup has been difficult to consistently source during the pandemic quarantine. Granted, there was a huge run on flour of all types, but my local store just pulled Cup4cup entirely after selling out. Out of four Amazon orders, two were in stock and shipped next day, one was only available through AmazonFresh and the last one was through regular Prime but took two weeks to ship. Things appear back to normal availability online, but my local grocery store hasn’t brought it back.

    Bottom line is that I’m using Cup4cup until I land on something better, if that ever happens. I’ll still search other stuff out because of the high price and availability. But the quality is pretty darn good.

    It's been hard finding a good gluten free flour. Just transitioned from gluten to non in the last month so finding a great flour has been a whole journey, with lots of weird acting flours. Surely we have the tech by now so we dont have to eat dry crumbly foods. Well folks, this is one of the better ones if not the best yet. Performed very well with my butter pie crust.     The price. It is soo expensive. Costs 14.99 per bag and so a loaf of bread costs £5 for the flour.
    However the results are worth it as we can eat gf scones, bread loaves( make toast!) bread buns, Naans,
    Focaccia, biscuits, pizza base that are as good as the non gf ones I make.
    Life saver. Everyone can eat the “same” meals with enjoyment.
