January 2022 Sallyโs Baking Challenge Recipe: Homemade English Muffins
January baking challenges are always my favorite because I like to focus on baking breadโ a welcome comfort after the sugary sweetness of holiday baking. My team and I always see a large volume of participation in January which shows many share our same sentiments! Homemade English muffins were a new recipe for me to tackle and your feedback said the very sameโ plus, many of you tackled your fear of yeast which is always something to celebrate! A lot of bakers used this challenging recipe as a fun indoor activity for snowy days or as a weekend project with your families.
Gathering together to try something new, comforting, and delicious. Is there anything better? ๐

This was my first baking challenge and it was definitely worth it! The icing set a little fast for me. As far as flavor goes, RICH! If I ever do these again, I might do half sizes! They sealed surprisingly well and kept a great brownie-like texture after baking.
Obviously this challenge captivated many bakers. And when have I ever enjoyed scrutinizing the photo entries for my idea of perfect size and color? What fun! Thank you Sally, great choice.
Looking at this I just gained 15 lbs.

I submitted my English Muffin photo yesterday and didnโt see it with the other contestant photos. I tried to submit the photo in the proper area to submit but when I clicked on โemailโ to send photo the page is not opening so I had to email it a different way. Please check this, there may be other entries unable to submit properly. Thank you so much!

Hi Tina! We have your entry in our January spreadsheet, so it was counted. It looks like team member Michelle replied to your email yesterday. But there was definitely a fluke and your photo didnโt make it onto a collage. There may have been a problem downloading it, but we will absolutely triple check this should it happen to anyone again! Tina, we actually just found your photo in one of the collages. Itโs in the 41st collage (the second to last one at the bottom) โ hard to spot for sure but these collages are the only way we can get everyoneโs photos on the site!!

Hi! I have been participating in the Baking Challenge for several months now, and havenโt received a confirmation email nor have any of my pictures been used. I am COMPLETELY fine with both of those things! I just wanted to make sure I shouldnโt be worried that my entries were not being received? I know you receive an overwhelming amount of entries, so I am by no means fretting, I just wanted to double check to be sure!
